Preheat oven to 350 degrees.
Use a brush to grease 12- cup muffin tin with one tbsp ghee or coconut oil.
In a large bowl, mix together 10 oz canned albacore tuna packed in water, 3 thin sliced scallions, and 2 tbsp minced fresh cilantro.
Add 1 and 1/3 cup cooked mashed sweet potato to the tuna mixture.
Next, mix in 1 tbsp minced jalapeno (optional), 2 large eggs, and 1/2 tsp red pepper flakes.
Then, season with salt and pepper to taste.
Mix everything together well.
Once Mixed, scoop 1/4 cup of the mixture into each greased muffin tin cup and flatten with the back of a spoon.
Bake the tuna caked for 20 to 25 minutes or until a inserted toothpick comes out cleanly.
